Equipment
Equipment plays a big role in how this recipe will turn out. I recommend using the following:
- Food processor
- Hand mixer
- Pie dish
- Mixing bowls
- Spatula
Instructions
- Step 1: Use a food processor to pulse the Oreo cookies into crumbs. Remove and place in large bowl. Add the melted butter to the Oreos. Mix well. Press into pie pan evenly. Freeze for 15 minutes.
- Step 2: In a large bowl, combine butter and the 1-½ C. of peanut butter. Beat until well combined. Add in the vanilla, and powdered sugar. Beat until well combined.
- Step 3: Add the peanut butter mixture to the Oreo crust. Smooth out evenly.
- Step 4: In a microwave-safe bowl, add peanut butter, chocolate chips, and heavy whipping cream. Heat in 15-30 second intervals. Stirring each time until fully melted. Pour over peanut butter pie. Smooth out evenly. Chill the pie for 4 hours or overnight.
Hint: The key with any ganache is to take your time. You do not want to burn the chocolate in the microwave.
Storage
Store the pie in the refrigerator for up to 3 days.
Top Tip
I would recommend not to use chunky peanut butter for this recipe. You can use natural peanut butter. It will appear oily at first but should firm up once you add in the powdered sugar. Just make sure to mix the natural peanut butter really well before adding it in.
