These delicious cranberry white chocolate chip cookies are the perfect combination of sweetness and tartness. I love to make these cookies for Thanksgiving for my family and friends. Variations

Want to amplify your cookies? Try these simple add-ins:

  • Chocolate - If desired, temper some dark chocolate and drizzle it on the cooled cookies.

Equipment

Equipment can have a big impact on how a recipe turns out. I would recommend using the following equipment for this recipe:

  • Mixing bowls

  • Medium-sized cookie scoop
  • Whisk

Instructions

Butter, sugar, eggs, and vanilla in a bowl.
  1. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper. In a large bowl, cream together butter and sugars. Once combined, add in the vanilla and eggs. Beat until well combined. Scrape down the bowl.

2 In a separate bowl, whisk together flour, cake flour, baking soda, and salt. Spoon the flour mixture into the wet ingredients. Beat until well combined and smooth.

3. Grab your spatula and fold in the dried cranberries and white chocolate chips.

4. Using a medium-sized cookie scoop, scoop out the dough and place 1-2 inches apart on the baking sheet. Bake cookies for 10-12 minutes, taking them out when they are golden on the edges but still a little undercooked in the middle. Let them sit on the hot baking sheet for 20 minutes.

Hint: Spooning in the dry ingredients will help ensure the batter comes out smooth.

Storage

Store a fully cooled cookies in an air-tight container on the countertop for 3-4 days.

You can also freeze these cookies. Place the cookies in a Ziplock bag and then pop them in the freezer. The cookies can be frozen for up to 2 months. Allow them to come to room temperature before serving.

Top Tip

For soft cookies, you want to remove them from the oven when the tops are still slightly wet. When you let them sit on the hot baking sheet it allows them to still bake at a lower temperature. This will prevent them from overbaking.

Ingredients
  

  • ¾ Cup Unsalted butter melted
  • 1 Cup Granulated sugar
  • 1 Cup Brown sugar packed
  • 1 Teaspoon Vanilla extract
  • 2 Eggs
  • 2-½ Cups All-purpose flour
  • ½ Cup Cake flour
  • 1 Teaspoon Baking soda
  • 1 Teapoon Salt
  • ½ Cup Dried cranberries
  • ½ Cup White chocolate chips

Instructions

Notes

  • Do not overbake the cookies. The cookies will keep baking on the hot baking sheet once you take them out of the oven.
  • Make sure to spoon in and level out the flour into your measuring cup when you are measuring out the flour. This will ensure you are using the correct amount.
